Fungal alpha-amylase is a popular ingredient to improve flour performance and dough consistency in milling and baking applications. Fungal amylase is a gentle-acting, forgiving ingredient in wheat flour applications, but some of the qualities that make it well-suited for baked goods (deactivated at low-temperatures, delivered in small doses) make it hard to measure fungal amylase activity in treated flours.
